Description

The aim of this course is to equip the candidate with the knowledge, understanding, skills and awareness required to undertake basic home butchery of a deer carcass. The one-day course provides the novice or less experienced stalker with a sound foundation of knowledge and legislation. Safety and basic hygiene legislation will be dealt with in a classroom situation before we move on to the larder carcass preparation area for the practical aspects which will deal with basic butchery techniques. The course will offer the candidate the chance to butcher a carcass under the direct guidance and supervision of the course tutor(s). There will also be some time for discussion and explanations of the course and associated subjects.
