HACCP Level 3 Food Safety Training Online

The Echo3 online HACCP Level 3 course trains managers and supervisors to implement and maintain an effective food safety management system based on HACCP principles.

HACCP stands for Hazard Analysis and Critical Control Points: a systematic, preventative approach to identifying and controlling biological, chemical and physical hazards in food production. It applies to every stage of the food chain, from delivery and storage through to preparation, cooking and service. Any food business, whether a restaurant, catering operation, food manufacturer or retail outlet, is legally required to operate a HACCP-based system under UK food safety law.

Managers who complete this course understand the seven HACCP principles, know how to apply them in practice, and can lead food safety compliance across their teams. Employers get documented proof that supervisory staff have received structured HACCP training as part of their legal obligations.

Why HACCP Training Matters

Foodborne illness remains a significant public health risk in the UK, with the food service and catering sectors accounting for a large share of reported outbreaks.

Legal Requirements for HACCP Training

  • Regulation (EC) No 852/2004 (retained in UK law): requires all food business operators to implement, maintain and document a food safety management system based on HACCP principles. This is the primary regulation governing HACCP compliance.
  • Food Safety Act 1990: establishes the general duty to ensure food is safe for consumption, and provides enforcement powers including improvement notices, prohibition orders and prosecution.
  • Food Safety and Hygiene (England) Regulations 2013 (and equivalent regulations for Wales, Scotland and Northern Ireland): set out the enforcement framework under which Environmental Health Officers inspect food businesses and verify HACCP compliance.
